Quick & Delicious Beef Pho

Weeknight dinners call for something quick and simple... more points if it's also nourishing and delicious. This no fuss pho ticks all the boxes!⁣

It will take only 15 mins to prepare with some beef sirloin kept in the freezer, dried rice noodles, bean sprouts, coriander and GOOD BONES Beef Broth seasoned with some fish sauce or soy sauce, Hoisin, lime and a little fresh or dried chilli if you like.⁣

INGREDIENTS

1 x 200g packet dried flat rice noodles
150g beef sirloin or scotch fillet, frozen
500ml GOOD BONES BEEF BROTH
½ tsp salt
2 tbsp soy sauce
2 tbsp hoisin sauce
1 tbsp sesame oil
2 clove garlic, finely sliced
1 small gnob ginger, finely sliced
1 tbsp lemongrass, finely sliced (optional)
Zest & juice 1 lime
4 cups silverbeet leaves, thinly sliced
1 zucchini, finely sliced into matchsticks
½ punnet grape or cherry tomatoes
1 cup bean sprouts, washed
½ cup shallots, finely sliced
1 cup coriander, picked
GOOD Sauce Hot Habanero to serve

METHOD

Cook the rice noodles according to packet instructions, drain, refresh and set aside.
Remove the frozen sirloin from freezer 10 minutes before using, then finely slice into strips and set aside. Place any remaining sirloin still frozen back into the freezer for another meal.

Pour boiling water over the cooked rice noodles to reheat for 2 minutes.

Combine the broth, 200ml water, salt, soy, hoisin, sesame oil, garlic, ginger, lemongrass, lime zest and juice in a pot and bring to the boil and taste. Adjust the seasoning then add the silverbeet, zucchini and tomatoes to warm through for 1 minute.

Drain the rice noodles and place in the bottom of 2 deep serving bowls, top with the bean sprouts and evenly distribute the raw beef over the noddles.

Evenly ladle the boiling broth and veggies over the noddles and beef and serve topped with the shallots and coriander.

Serve with a little Hot Habanero if desired.
