Lamb Shoulder Pot Roast

This is pure comfort food from @cheftomwalton. It's also perfect to make ahead of time and reheat if you do find yourself on the busier side of life.
A couple of thick sliced onions are sweated off in a little olive oil before 2 tablespoons of tomato paste is added and cooked a minute longer. 500ml GOOD BONES Beef Broth and 500ml water is poured in, seasoned and brought to the boil with a little red wine if you like.
Next add 4 large potatoes, cut into large pieces, 1 head of garlic, cloves separated and some rosemary to the pot and nestle in the lamb shoulder, seasoned and rubbed with olive oil. Cover the whole lot with baking paper and a lid and roast in a 170°C oven for 2.5 -3 hours. Check that the liquid hasn't evaporated, adding more if needed throughout cooking. Serve the lamb and potatoes scattered with chopped parsley, some simple cooked veggies and GOOD FAT Aioli 👌
