Chicken Cacciatore
Chicken Cacciatore. A quick and comforting dinner and the perfect dish to add to your repertoire. This version by @cheftomwalton is a super simple yet supremely satisfying one pot wonder. Using flavoursome bone broth makes all the difference.
Method:
Onion, garlic, thyme, olives and oil into a large pan with some salt and place over a high heat. Cook for 3 minutes then add 3 tbsp tomato paste and cook for 1 minute more.
Add jointed chicken (or chicken pieces) with a little salt and cook to give some Colour to skin side, not too much as it colours as it bakes.
Add tomatoes, chicken bone broth and potatoes and arrange so chicken is on top, skin side up. Bring to boil then transfer, uncovered, to 220C oven for 30 minutes
Add chickpeas and parsley and stir through. Adjust seasoning and serve.
