Sweet Chilli Pork Mince Larb

This Sweet Chilli Pork Mince Larb recipe ticks all the boxes.
Ingredients
500 g pork mince
1 clove garlic, crushed
1 tbsp fish sauce
1/2 cup GOOD Oil Asian Dressing
1 large lime, halved
1 Thai shallot, finely sliced
1 green chill, finely sliced
100 g bean thread noodles, cut into 3 cm sticks
1 head butter lettuce leaves, rinsed
1/3 cup unsalted or salted peanuts
1/2 cup fresh coriander
1/2 cup fresh mint
1 spring onion, finely sliced
1 cucumber
Method
Fry mince in frypan over medium-high until golden. Stir and break up. Cook for a further 5 minutes.
Add garlic, stir and turn off, letting the residual heat cook it.
Once at room temperature, toss mince with fish sauce, Asian dressing, juice of half lime, Thai shallot and green chilli. Season with salt.
Meanwhile, soak the noodles for 5 minutes until soft, drain and rinse in cold water.
Toss noodles with pork mixture.
Serve with lettuce leaves, peanuts, herbs, cucumber and lime wedges.
