Sweet Chilli Pork Mince Larb

It's hot, it's almost dinner time and you're in the mood for something quick, fresh, nourishing and damn tasty...⁣

This Sweet Chilli Pork Mince Larb recipe ticks all the boxes.

Ingredients⁣

500 g pork mince⁣
1 clove garlic, crushed⁣
1 tbsp fish sauce⁣
1/2 cup GOOD Oil Asian Dressing
1 large lime, halved⁣
1 Thai shallot, finely sliced⁣
1 green chill, finely sliced⁣
100 g bean thread noodles, cut into 3 cm sticks⁣
1 head butter lettuce leaves, rinsed⁣
1/3 cup unsalted or salted peanuts⁣
1/2 cup fresh coriander⁣
1/2 cup fresh mint⁣
1 spring onion, finely sliced⁣
1 cucumber⁣

Method⁣

Fry mince in frypan over medium-high until golden. Stir and break up. Cook for a further 5 minutes.⁣
Add garlic, stir and turn off, letting the residual heat cook it.⁣
Once at room temperature, toss mince with fish sauce, Asian dressing, juice of half lime, Thai shallot and green chilli. Season with salt.⁣
Meanwhile, soak the noodles for 5 minutes until soft, drain and rinse in cold water.⁣
Toss noodles with pork mixture.⁣
Serve with lettuce leaves, peanuts, herbs, cucumber and lime wedges.
