Ocean Trout and Avocado Ceviche
A fresh light dish to enjoy over the warmer months.
Sliced ocean trout is available from Harris farms and can be swapped for kingfish or tuna if you like.
Serves 2
INGREDIENTS
Juice 3 lime
2-3 tsp GOOD Sauce Hot Habanero
2 tbsp olive oil
Sea salt, fresh ground black pepper
200g sliced Ocean Trout sashimi
1 avocado, diced
1 Lebanese cucumber, seeds removed, thinly sliced
½ bunch coriander, picked
Extra lime to serve
METHOD
For the dressing, combine the lime juice, habanero sauce and olive oil. Lightly season to taste.
Gently toss the fish in half the dressing and scatter over plates. Scatter the avocado over the fish.
Mix the cucumber and coriander together with a splash of dressing and scatter around the fish.
Drizzle the remaining dressing over and around the ceviche.
