Nourishing Broccoli Soup
This nourishing and satisfying broccoli soup from @cheftomwalton is perfect for strengthening the immune system and giving the digestive system a break. Both important as we come out of winter and into spring. This soup keeps well so make a big batch, and take it to work either cold or fill a thermos so it's hot, ready to go if you are on the run or out and about.
To get started:
3 heads broccoli, roughly chopped small (stalk too!) - save 1 head of florets to roast
1 brown onion, sliced
2 clove garlic, crushed
3 tbsp olive oil
Pinch salt
- preheat oven to 200°C
- toss 1 broccoli worth of florets in a little oil and seasoning and roast for a few minutes - set aside, toss with a little dairy free pesto if desired, otherwise some lemon will do the job.
- in a big pot, sweat the rest of the broccoli with the onion and olive oil for 4 minutes until bright green. Then add 500ml GOOD BONES Chicken Broth and 200ml water and cook for 4 minutes, season to taste.
- next add a big handful of baby spinach and 1/2 cup frozen peas and simmer for 2 minutes.
- blend until smooth while hot (in batches if needed) and top with the herbie broccoli. Leftovers would work as a great topping too. Some hot smoked salmon flakes over would be wicked as would some yoghurt if desired.
