Mediterranean Tomato and Burrata Salad
The perfect fuss free salad for the warmer months when tomatoes are at their best.
Perfect for entertaining, it’s a meal on its own or part of a larger spread alongside anything from grilled meats, seafood or other vegetable-based dishes.
Some crusty bread is a very good idea, as is some fresh peeled prawns.
Serves 4
INGREDIENTS
3 vine-ripened or ox heart tomatoes, sliced approx. 5mm
1 punnet mixed heirloom baby tomatoes, cut in half
2 100g balls burrata Mozzarella
Flake sea salt, fresh ground black pepper
½ cup olives
1 cup picked basil
¼ cup picked dill (optional)
4 tbsp GOOD Oil Mediterranean Dressing
METHOD
Spread the vine ripened tomatoes over a large platter, lightly season then scatter the baby tomatoes over that and add the burrata.
Season the burrata and baby tomatoes lightly and drizzle the dressing over everything before finishing with the olives and herbs.
