Hot Smoked Salmon, Avocado & Chili Mayo Lettuce Cups
As the temperatures rise here in Australia, stress free, delicious food that enables you to spend more time with friends and family is best.
These lettuce cups are not only super healthy, they are perfect for entertaining outdoors and for picnics in the warmer weather.
Try swapping the hot smoked salmon for trout, cold smoked, roast your own fresh fish, or try sashimi or cooked prawns.

INGREDIENTS
1 head iceberg lettuce
2 Lebanese cucumbers, finely sliced
200g hot smoked salmon or trout, flaked
¼ cup sliced shallots
¼ cup finely chopped coriander (optional)
½ cup GOOD FAT Chilli Mayo
2 avocados
2 lemon, to serve
METHOD
Cut the iceberg into quarters, cut out the core and separate the leaves, giving about layers per cup and cutting to make at least 12 lettuce cups that the filling can sit in.
In a mixing bowl, combine the flaked fish, shallots, coriander, 1/3 of the Chilli Mayo and season with a little salt, pepper and squeeze of lemon.
Mix gently then pile into the lettuce cup, spoon over the remaining mayo, a little in each and finish with a slice of avocado, a little more pepper and lemon to serve.
