Quick and Easy Chicken Broth Laksa

Lucy Tweed of Every Night of the Week is the queen of speedy, tasty dinners that the whole family will love. This GOOD BONES Chicken broth-loaded Laksa is all those things and more—plus, you can quite literally make it in under half an hour, which is a huge weeknight win!!

INGREDIENTS

1 chicken breast

1 tbsp Church Farm Thai Red Curry Paste

200 ml coconut milk

500ml GOOD BONES Chicken Broth

50 g Organic Bifun Rice Noodles

1⁄2 c thai basil leaves

1⁄2 c picked bean sprouts

Lemon to serve


METHOD

  • Bring 4 cups water to the boil and place chicken breast into the wtaer. Bring back to the simmer then cover with a lid and remove from heat until cool to touch (12mins).

  • In a heat proof (you could use your soup bowl!) poor boiling water over the noodles and allow to soften for 6-10mins.

  • Meanwhile, over a medium heat, cook the laksa paste until fragrant - 5 mins, then add the coconut milk and broth.

  • Bring to a simmer for 5mins.

  • Drain the noodles and place back in the bowl. Slice the chicken and place it on top.

  • Pour over the steaming laksa broth. Top with herbs, sprouts and lemon wedges.
