Butter Chicken and Rice Tray Bake
Tray bakes are the new one-pot meal… and this butter chicken and rice bake will not disappoint. This style of cooking requires a little effort up front, but then you can sit back and relax while the oven does it’s thing.
To make this tray bake for four people, joint a whole chicken into breasts (wing attached) and legs, then cut each breast in two and cut the leg to give you two thigh pieces and two drumsticks (alternatively use 8 drumsticks or 8 skin on thigh pieces).
Mix 1 tbsp of butter chicken or curry spice with 2 tbs olive oil, toss the chicken in this and season well.
Sauté 1 diced onion, 2 chopped garlic cloves in a generous amount of coconut oil for a couple of minutes and then add 1 tbsp butter chicken or curry spice, cook for another minute, then add 1 1/2 cups basmati rice, season and mix through the onion to coat the rice. Place the rice mix into a baking tray and tuck in the chicken pieces.
Pour over 500ml of hot GOOD BONES Chicken Bone Broth and 200ml water, cover with baking paper, foil and cook for 30 minutes in a 200°C oven. Remove the baking paper and foil and cook for 10 minutes longer then serve with coriander, lime, some simple cooked veggies and yoghurt if desired.
