Brown Rice, Cauliflower, Ginger, Shallot Congee
Is there anything more comforting than congee? Add bone broth to the mix and you’ve got a big ol’ hug for your gut, your immune system and your general sense of wellbeing!
Here’s the perfect congee recipe from the loveliest Lucy from @everynightoftheweek. Cook it long and slow and enjoy the process :)
Good Bones chicken broth. 500ml into a pot.
Add half a cauli chopped. Half a c brown rice. 4 mini carrots copped into big chunks. 3 massive slices ginger. Coriander stems and green onions chopped fine. A lemongrass root. Simmer simmer. I ended up adding a ltr of water just to see out the process. Don’t worry... you still have a bag of @undividedfoodco bone broth of goodness in there.
The cauliflower breaks down. The rice looks like cauliflower. Add sesame oil. Boil a couple of eggs.
Fish out the lemon grass and ginger.
Finely slice the ginger to be a punchy topping and finely sliced green onions. Coriander. Chilli sesame oil. A soft boiled egg. Sesame seeds.
