Tray Roast Cauliflower Salad
Healthy cooking made easy is what we're all about and this Tray Roast Cauliflower Salad from @cheftomwalton ticks all the boxes. Nourishing, no fuss, deliciousness.
Serving the salad in the tray you roast the cauliflower in means less washing up and we think it looks pretty awesome. It's also perfect for a picnic or easy outdoor entertaining.
Simply toss big pieces of cauliflower in olive oil and seasoning and roast in a 220°C oven until gnarly, about 15 minutes, then let cool on the tray.
Meanwhile, cook some brown rice (or any grain) in GOOD BONES Chicken Broth for added nourishment and deliciousness and toss the cooked/cooled rice with some GOOD SIDE Caramelised Onions, lots of chopped mint, parsley, grape tomatoes, sliced cucumber and then dress it with GOOD Oil Balsamic Dressing. Once the roast cauliflower is room temp, spoon the salad around it, scatter some hazelnut dukkah or crushed nuts and spoon over cottage cheese, goats curd or yoghurt if desired 👌
