Raw Cashew Crunch Salad with Spicy Mayo

This salad is perfect on its own, packing so much texture, flavour & goodness into every mouthful. It's also great with cooked chicken or fish flaked through, some cheese or to serve alongside your protein for a larger meal.⁣

If making it the night before as lunch prep, don’t dress the salad as it will wilt too much. Just dress the morning of or take the spicy mayo dressing with you separately.⁣

Makes 4-6 serves⁣

INGREDIENTS

¼ red & white cabbages, finely shaved⁣
1 bulb fennel, finely shaved⁣
1 beetroot, grated⁣
1 carrot, grated⁣
½ bunch each mint & coriander, roughly chopped⁣
½ cup shallots, finely sliced⁣
1 cup edamame, defrosted⁣
1 cup cashew nuts, roughly crushed⁣
1 cup GOOD FAT Chilli Mayo⁣
Juice 1 lemon⁣

METHOD

Prepare the ingredients and in a large mixing bowl, combine the cabbages, fennel, beetroot, carrot, herbs, shallots, edamame, cashew nuts and mix well.⁣

Combine a cup of GOOD FAT Chilli Mayo with the lemon juice.⁣

To serve, season the salad with salt and pepper then toss through the chilli mayo dressing.
