GOOD Gravy!
A couple of years ago we had to cease GOOD Gravy production to make way for more broth. We didn’t want to leave you in the lurch come Christmas time so each year we share our much loved recipe with you…
INGREDIENTS
3 tbsp grass fed ghee, butter (or fat from the meat you are roasting)
1 roast onion
2 cloves of garlic
Herbs of choice (we like thyme)
1tbsp of tapioca flour
500g GOOD BONES Organic Bone Broth
(we like to use 300g Beef and 200g Chicken)
Sea Salt and freshly ground black pepper to taste
METHOD
1. Peel onion, cut in half and roast until really nice and brown.
2. In a pot, add your ghee or fat of choice, chopped garlic and herbs, sautée for 2-3 mins but do not brown. Chop the roasted onion and add it to the pot too.
3. Add broth and bring to a simmer. Simmer for 20 mins or till it reduces by a third.
4. Pour ingredients into a high speed blender or use a stick blender to achieve desired consistency. Pour back into pot and simmer.
5. In a bowl, add tapioca and then whisk in 1/4 cup water. Whisk to remove any lumps.
6. Slowly pour tapioca mix into the pot, keep whisking as the gravy thickens and return it to a light simmer. Add salt and pepper to taste.
7. Remove from heat and pour liberally over your roast!
