Chicken Schnitty with Aioli
Lucy Tweed a.k.a. @everynightoftheweek does it again with GOOD FAT Aioli Chicken Schnitty!
Sure to be a favourite with the whole family, the chicken is 'painted' with Aioli before it's pressed into the flavoured crumb for next level flavour. Genius!
Ingredients
2 organic chicken breasts, cut horizontally into two even halves Lemon zest from 1 small lemon
1 tablespoon nutritional yeast
1⁄4 cup GOOD FAT Aioli
80 g sourdough crumbs
2 tablespoons dried rosemary
2 tablespoon dried oregano
1⁄4 cup olive oil
Method
Combine panko crumbs, lemon zest, nutritional yeast and dried herbs.
Paint GOOD FAT Aioli thickly on either side of the chicken halves and press into the flavoured crumb.
Pan fry the chicken in olive oil over medium-high heat until golden brown, approx. 2 minutes each side.
Serve with mashed potato, sauerkraut and, of course, GOOD FAT Aioli. Maybe even a pickle, if you feel like it.
