Burnt Miso, Beef, Broccoli & Chilli Ramen
Looking for a recipe to spice things up?! This burnt miso, beef, broccoli & chilli ramen makes for a satisfying lunch or quick dinner for two.
In a pot of boiling water, cook 2 portions of ramen noodles according to packet instructions and 1 head broccoli, roughly chopped. Soft boil 2 eggs (for 5 mins) then peel and set aside. Drain, rinse and set aside the noodles and broccoli.
Heat 2 tbsp sesame oil in a pot and add 2 tbsp white miso and 2 cloves sliced garlic. Cook, stirring, for 2 minutes until caramelised then add 2 tbsp soy sauce and cook until that too has caramelised. Add 2 tbsp rice vinegar and cook for 1 minute then add 1L GOOD BONES Beef Broth, 1 tsp dried chilli flakes or chilli oil and bring to the boil.
Taste and season, then add the noodles, some sliced Asian greens, thinly sliced carrot and finely sliced beef sirloin. Cook for 1 minute, taste, then divide between two bowls and top with the egg, kimchi, extra Japanese chilli powder if desired, some sliced shallots and nori.
