Beef Broth and Dumpling Noodle Soup
Quick, easy, nutritious and delicious; that's our jam! This beef broth and dumpling noodle soup by our fave Lucy Tweed @eveynightoftheweek ticks all those boxes and so many more!
Ingredients
150 g beef mince
25 g water chestnuts - chopped
1 lime leaf, finely chopped
1⁄2 ts grated ginger
1 ts garlic chive, chopped
1 ts green onion, finely chopped
90 g HakuBaku organic soba noodles
2 tbs GOOD Sauce Sweet Chilli
500ml GOOD BONES Beef Broth
1⁄4 c picked Vietnamese mint leaves
1⁄4 c picked coriander leaves
2 star anise
Lime and birdseye chilli to serve
Method
Mix the beef, water chestnuts, lime leaf, ginger, garlic chive and green onion in a bowl and form into tablespoon size meatballs.
Cook the noodles to packet instructions and place into a soup bowl.
Poach the meatballs in simmering water until just cooked - 5 mins.
Simmer the broth with the star anise and sweet chilli for 5mins.
Place meat balls and broth onto noodles and tom with lime juice, chilli and herbs.
