BBQ MSC Banana Prawns with Herb Mayo
One of @scottgoodingproject’s go-to BBQ meals that always pleases a crowd.
As with all of Scott’s recipes, it’s gluten free, anti inflammatory and made with love. Just the type of cooking we adore.
Serves 4
INGREDIENTS
20 MSC banana prawns – peeled with tails left on (rinsed and drained)
2 tbs butter
1 lemon – juiced
¼ bunch fresh coriander – roughly chopped
1 cup of GOOD FAT MAYO
1/4 bunch fresh coriander & Mint - roughly chopped
sea salt
black pepper
METHOD
· Pre heat the BBQ on high
· Baste the prawns with some butter
· Cook the prawns on the BBQ until the prawns turn pink and opaque
· Combine the mayo and the fresh coriander/mint - mix together
· Remove from the heat and dress with some lemon juice
· Season and serve with fresh coriander and herb mayo
