Asian Tray Roast Salmon and Smashed Cucumber Salad
We love a quick, simple and healthy weeknight meal and this Asian inspired Tray Roast Salmon and Smashed Cucumber Salad is just the ticket.
Simply toss some salmon fillet (or whatever fish you want) and broccolini with a healthy splash of GOOD Oil Asian Dressing. Lightly season with salt and pepper and scatter onto a lined baking tray.
Throw that into a preheated 200°C oven for 12-15 minutes.
Meanwhile crush a couple of cucumbers (in season now!) with the side of a knife, then pull apart into chunks. Season with a little salt and dress with 2 tbsp GOOD Oil Asian Dressing and a handful of chopped coriander. Toss and set aside.
Once cooked, let the tray stand for 5 minutes then scatter a simple salad of mixed green leaves and thinly sliced radish, tossed in a little more dressing, around the salmon.
Serve with the smashed cucumber salad and GOOD FAT Chilli Mayo 👌
